Going with a larger tire size basically just give you a higher weight capacity to work with. There's a bit less rolling resistance and in theory bumps won't feel quite a big but for the size differences you are considering you really won't notice much except for a slight change in height (probably won't notice it actually) and a higher weight capacity which you may not even need.
